Located on the coast, Brindisi, is an Italian provence renown for its fresh seafood. It shouldn’t be a surprise that Brindisi Cucina di Mare holds itself to that standard when it comes to creating and serving their seafood dishes. The signature dish, “Linguini allo Scrigno,” puts a novel yet entertaining spin on eating a hearty pasta. Named after a treasure chest, or “scrigno” in Italian, this dish holds a treasure’s worth of fresh seafood and delicious homemade pasta.
In a large bowl, handmade linguine is tossed with mussels, clams, calamari, rock fish, shrimp, pieces of salmon, and a tomato based lobster sauce. After covering the bowl with pulled pizza dough, Chef Santiago Avila bakes the dish to finish the cooking process. As the dough rises in the oven, an inflated looking pot pie is created. Most people don’t expect to see what comes to their table.

Not to worry, the servers help with cutting open this pot pie and revealing the surprise mix of seafood and pasta, which only looks overwhelming large. As a matter of fact, after one taste, most guests have no problem with finishing the entire bowl. And who wouldn’t want to use the pizza crust to finish up the last few drops of the lobster sauce?
The Linguini allo Scrigno lets you have a taste of the sea without leaving the San Francisco mainland. The freshness of its linguini, the array of colorful market fresh seafood, and it’s jaw dropping presentation, allows for a simple recipe to taste much more than amazing. Paired with a light red or a crisp white wine this dish gives guests an experience similar to that of being on the shores of Brindisi, enjoying the daily catches from the Adriatic Sea nearly 7,000 miles away.
